Ingredients
2tbls Vegetable Oil
2 cloves Garlic sliced
1 kg Clams
2tbls Parsley
200 grs Cherry tomatoes cut in half
Juice of ½ Lemon
50 ml White wine
Pinch of salt and pepper
4 slices of toasted bread
- Heat the oil in a pan and fry the garlic until soft.
- Add the clams, parsley and white wine, continue on a high heat for approx 2 minutes to allow the wine to evaporate.
- Reduce the heat and squeeze over the lemon juice and stir.
- Finally add the tomatoes and seasoning and cook for a further 5 minutes.
- Garnish with a handful of chopped parsley Serve hot with toasted bread.
