Margherita all’acciuga rossa

Serves 4
Ingredients
2tbls Vegetable oil
2 Garlic cloves sliced
2 Anchovy fillets
1tbls Pine nuts
1tbls Raisins
2tbls Tomato paste
250ml Water
Seasoning
1tbls Vegetable oil
100g Breadcrumbs
4lt Water
Salt pinch
400g Pasta
- Heat the vegetable oil in a deep-frying pan and fry together the garlic and anchovies. Stirring occasionally with a wooden spoon to break up the anchovies.
- Once the garlic has browned add the pine nuts, raisins, tomato paste, water and seasoning. Stir well to allow the paste to dissolve.
- Gently simmer for 10minutes.
- Bring to the boil water and salt adding the pasta. Cook for 7minutes.
- Coat a separate frying pan with vegetable oil and toast the breadcrumbs for approx 5minutes on a low heat.
- Drain the pasta and add to the sauce. Stir together.
- Divide between 4 bowls and serve with a sprinkling of toasted breadcrumbs.
