Ingredients
200g Lentils
Water enough to cover lentils
2tbls Vegetable oil
1 Onion small finely chopped
1Carrot medium finely chopped
1Celery stick finely chopped
80gChestnuts
1.6lt Water
Seasoning
200g Pasta
1 cos lettuce leaf chopped
2tbls Olive oil
- To allow the lentils to soften, soak for 24hours in water. Rinse.
- In a large saucepan heat the vegetable oil and fry the onion, carrot and celery until soft.
- Add the lentils, chestnuts, water and seasoning. Cover and bring to the boil.
- Reduce the heat and simmer for 35minutes.
- Break the spaghetti into small pieces and add to the lentils and cook for a further 7mins, stirring occasionally. (NB if the sauce becomes too thick add a little water)
- Finally add the lettuce and stir.
- Serve immediately with a drizzle of olive oil over the top.
